How do I disable those weird beams that appear when any items are dropped?

Remove the Loot Beams mod.

How do I disable the weird 3rd person view?

Remove the Shoulder Surfing Reloaded mod.

How do I move/disable the Block Name on the middle left side of the screen?

Use the /theoneprobe config command. Then configure the one probe as you please.

How do I disable the purple/yellow HUD?

Remove the Classic Bars mod.

How do I disable the realistic dropped items?

Remove the Item Physics Lite mod.

How do I disable the large Item Icon that appears on the left side of JEI?

While the Inventory is opened, press Shift+Z. Or remove the ItemZoom mod.

How to I disable the White Theme of the mod pack?

While the main menu was made using the FancyMenu mod (delete this mod if you want to remove the main menu for some reason), the rest of the options menu was made with the KubeJS mod. Under no circumstance, do not remove this mod - this will break the mod pack. To modify/remove the custom White Theme, first, close the game. After that, go to The Decursio Project - Expert\kubejs\assets and delete the minecraft folder. This can also be done with the game opened. After the changes were made, use F3+T to reload the game's textures (in most cases, it will be better to restart the game entirely).

How do I disable the Rainbow and the Planets in the Sky?

It's a feature from Botania. You can disable it in the mod's config which can be found in The Decursio Project - Expert\config\botania-client.toml. The feature it's called normalWorlds and it should be set to false.
